Our Pinot Noir grapes are picked early in the morning while the weather is cool, to prime the fruit for a cold soak before slow fermentation in stainless steel before being clean racked to a combination of French and American oak. The wines undergo 100% malolactic fermentation. The Diamond Pinot Noir is carefully cultivated, first in the vineyards, and later in the cellar – a delicious Pinot Noir for any occasion.
