"My father's mother, Maria Zasa, was an Italian born in Tunisia, a French territory at the time. It was a treat to grow up with a grandmother who spoke English, Italian, Arabic and French. I remember the little French songs she would sing to us about the marionettes, and also her toast when about to sip a glass of wine. She would always say, ‘À votre santé,’ meaning to your health.”– Francis Coppola
A Toast to family traditions
In Maria Zasa's honor, we have created a Chardonnay and a Pinot Noir, France's two classic Burgundian varietals, in an elegant and delicate style. Named “Votre Santé” after the traditional toast in French, these wines pay tribute to family traditions.
Our 2013 Pinot Noir reflects the beauty of the vintage. Moderate weather throughout the growing season put a little pressure on the vines, and provided the fruit with harmoniously well-balanced structure and texture. Brief heat spells followed by cool days allowed for full development of flavors. We experienced above average yields but since the weather allowed the fruit to slowly ripen and we harvested slightly later than normal, the grapes developed tremendous concentration and a very nice balance between ripe fruit and vibrant natural acidity.
Beyond its lovely garnet color, this wine offers a tantalizing fragrance of wild strawberries, bergamot and star anise along with luscious flavors of briary raspberries, cherries and spicy oak. While we tend to like our Votre Santé Pinot on the lighter, elegant side, this year’s wine has a bit more flesh and volume to match the intense aromatics and lengthy finish, making it all the more sophisticated. Pairs beautifully with grilled mahi, lamb chops or a wild mushroom quiche.
