Champagne Pickled Shrimp

Ingredients
- 3 lb peeled and deveined large cooked shrimp
- ¾ cup olive oil
- 1½ cups champagne (or sparkling wine)
- ½ cup orange juice
- 6 sprigs fresh rosemary
- ½ red onion, sliced
- 6 bay leaves
- 4 cloves garlic, thinly sliced
- 1 Tbsp kosher salt
- 1 tsp celery seed
- 1 tsp mustard seeds
- 1 tsp crushed red pepper
Directions
- Place shrimp in a large bowl; add all remaining ingredients, toss.
- Cover, and refrigerate, stirring occasionally, at least 1 day before serving.
